Ultra Soft Oatmeal Raisin Cookies

Oatmeal raisin cookies are a wonderful treat all year round, and their cozy, warm flavors make them particularly appealing as we transition into the fall months. Wholesome oats, naturally sweet raisins, enhanced with some cinnamon, offer not just comfort but also nutritional benefits. Using the right ingredients can ensure that these cookies are soft and chewy while also being versatile enough to accommodate various dietary preferences, including grain, dairy, and egg-free options. This makes them a fantastic choice for enjoying a healthier treat without compromising on taste.

Ingredients: 

  • 1 cup certified gluten-free oats
  • 3/4 cup gluten-free flour
  • 1.5 tsp baking powder
  • 3 tsp cinnamon
  • 3 tbsp grass-fed butter, melted
  • 1 whole pastured egg
  • 2 tsp vanilla extract
  • 1/2 cup honey or maple syrup
  • 1/4 cup raisins

 

Directions:

  • Preheat oven to 325. Mix all ingredients together in a large bowl and refrigerate for at least 30 minutes. Line a baking dish with parchment paper and drop 12 rounded scoops. Bake for 20 minutes and let cool for 10 minutes. Enjoy!
